I finally found a recipe for blintzes similar to the way my dad made them: with a cottage cheese filling (he stirred in some cinnamon) and sour cream and strawberry jam or preserves on top. These are killer. IHOP does a decent job of them, just make sure to get preserves instead of the sickly sweet strawberry topping, which is more expensive and - in my opinion - ruins the taste.
